Wednesday morning started like this, I had some girl friends over and I had prepared a big girly lunch. I started out with not that much fun things in the fridge, but with some creativity and ideas I ended up with a whole table full of goodies.
An easy and pretty thing to do, is to serve juice in a pretty wine/champagne/drink glass. As well for yoghurt, Instead of a bowl, use a glass and look how much better it looks. I am mostly proud of my scones, that I baked 30 minuter before my guest came, super easy!

Healthy Breakfast Scones

You need:
3 x 3/4 cup flour • 3 dl mjöl
2 tsp baking powder • 2 tsk bak pulver
1/4 cup butter • 50 gram smör
2 cups cottage cheese • 250 gram keso

You do:
Put oven on 480°F (250°C) and prepare a cookie sheet with parchment paper.
Mix flour, baking powder and a little bit salt in a big bowl. Then add the butter, and finally stir in the cottage cheese. (I added some crushed almonds in the dough, but you can put whatever you want, or nothing) Mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. Place on a slightly floured surface and cut up small pieces and form your scones. Sprinkle with some oats on the top, and place on cookie sheet and put in oven for 15 minutes. (I formed 8 “medium” scones, and they were perfect)

Homemade Healthiness.

A Healthy Breakfast/lunch/dinner. The delicious Oven-pancake.
Yesterday I tried out a new recipe, I mixed my own recipe from two different sources, plus added some thing I like. And let me just tell you. It was delicious! I had a piece for both lunch & dinner. Yum!
The best part of it: Its so easy!

You need:

3/4 cup oats • 1½ dl fiberhavregryn
1/2 cup whole wheat flour • 1 dl dinkelmjöl/grahams mjöl
½ teaspoon salt • 1/2 tsk salt
2 teaspoons baking powder • 2 tsk bakpulver
2 eggs • 2 ägg
1 cup milk (almond milk) • 2 dl minimjölk (mandel mjölk)
1 cup cottage cheese • 2 dl Keso
3 baby carrots • 3 mini morötter
1/2 apple • ½ äpple
15 almonds • 15 mandlar
1 tbs cinnamon • 1 msk kanel

You do: 

Start by preheating the oven to 435°F. Mix the dry ingredients in a big bowl. Afterwards stir down the eggs, the milk and the cottage cheese until the dough is even with no lumps. Chop up carrots, apple and almonds to small pieces and pour down in the dough. Butter a ovenproof dish and add some oats on the sides. Then pour the dough down in the dish. Last but not least, spice it with the cinnamon. Put dish in oven and let bake for 35-40 minutes. Once done, let cool of for a couple minutes, and then serve with some cottage cheese and berries. 

Börja med att sätta ugnen på 225 grader. Blanda de torra ingredienserna I en stor bunke. Vispa sedan ner äggen, mjölken och rör ner keson tills smeten är jämn utan klumpar. Riv ner morötterna och applet och rör sedan ner i smeten. Hacka mandlarna (storlek som passar dig) och häll sedan ner de bland resten av ingredienserna. Smöra en ugnsfast form med kokosolja/smör och bröa med havregryn längs kanterna. Till sist, häll i smeten i formen och krydda med kanel innan den ställs in i ugnen för att gräddas i ca 35-40 minuter. Låt pannkakan svalna (och stelna) I circa 5 minuter innan den serveras. Servera med keso och bär.

Thursday night was enjoyed like this. After a long walk with my dog in sunny yet chilly weather. Came home, took a shower and made my favorite delicious Banana hotcakes, added some cottage cheese and grapes. (Find my recipe here) With my meal I read one of my favorite magazines, so much inspiration! Don’t you just love those evenings?

Who doesn’t love scones?

What if there was a healthier version, that still tastes like heaven. That, you would love to eat, right?

You need:
1 1/2 cups whole grain/wheat flour • 3 1/2 dl grahamsmjöl
1 1/4 cup old-fashioned oatmeal • 3 dl havregryn
2 tablespoon baking powder • 2 tsk bakpulver
1/4 teaspoon salt • 1 krm salt
1/2 cup unsalted butter, melted • 50 g smör, smält
2 cups cottage cheese • 250 g Keso
1 cup fresh blueberries • 1 1/2 dl färska blåbär

You do:
Preheat oven to 425°F. Line a cookie sheet with parchment paper. Mix flour, oats, baking powder, salt in a large bowl. Then add the melted butter and the cottage cheese in the mixed bowl. Last but not least add the blueberries in the bowl. Work the dough with your hands until the dough does not hang on to the side of bowl. Scoop 1/2 cup balls out of the dough and place on cookie sheet a few inches apart. Bake until light brown, 15-17 minutes. Let cool, and the serve!
Ställ ugnen på 250°C. Förbered en “kakplåt” med bakplåtspapper. Blanda mjöl, havregryn, bakpulver och salt i en stor bunke. Tillsätt sedan till det smälta smöret och keson i den blandade bunken. Sist men inte minst häll i blåbären i blandningen och rör runt. Arbeta snabbt ihop till en deg tills degen inte hänger fast i bunkens sidor. Använd ett 1 dl mått för att skopa upp bollar. Placera sedan ut på plåten, med några centimeter emellan. Grädda i ugnen 15-17 minuter. Låt svalna, och sedan servera!

 

Me – starting the day – best way possible.

Todays breakfast was oatmeal with banana/strawberry/grape pieces + cinnamon and sunflower seeds. On the side is a delicious homemade smoothie with 1banana, 2strawberries,watermelon and vanilla yoghurt. Yum!

I also have some very fun news, that you will find out later. Super excited!
